Why This Kofta Hits Different

  • Ready in 30 minutes flat
  • One bowl, minimal dishes
  • Kid-tested, parent-approved
  • Uses stuff you probably have at home
  • Leftovers taste even better the next day

This is the recipe I make when I really don’t feel like cooking — and it still turns out amazing. Okay, let’s get into it!

Mouthwatering Tahini Kofta

What You’ll Need

  • For the kofta:
  • 1 lb (450 g) ground lamb or beef (the cheap kind works fine)
  • 1 small onion, very finely grated
  • 2 cloves garlic, minced
  • 1/2 cup fresh parsley, finely chopped
  • 1 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp ground allspice
  • 1/2 tsp kosher salt, plus more to taste
  • 1/4 tsp freshly ground black pepper
  • 1 large egg, room temperature
  • 2 Tbsp plain breadcrumbs or fine bulgur (optional)
  • For the tahini sauce:
  • 1/2 cup tahini (stirred smooth)
  • 1/2 cup plain Greek yogurt
  • 2 Tbsp fresh lemon juice
  • 1 small garlic clove, minced
  • Warm water, 1–3 Tbsp to loosen
  • Salt to taste
  • For topping:
  • 2 Tbsp toasted pine nuts or chopped pistachios
  • 1 tsp sumac or smoked paprika
  • Extra parsley, finely chopped
  • Lemon wedges (my favorite part!)

For the good stuff: Don’t forget a handful of fresh herbs — optional but SO worth it.

How to Make It — Stupid Easy

  1. First things first — in a large bowl, combine ground meat, grated onion, garlic, parsley, spices, salt, pepper, egg, and breadcrumbs. Mix lightly until just combined.
  2. Dampen your hands and form 8–10 oblong koftas, each about 2 inches long, with a shallow groove along each for even cooking.
  3. Chill the formed koftas on a tray for 10–15 minutes to firm up. Walk away for 20 minutes. Go scroll your phone. It’s fine.
  4. In a separate bowl, whisk together tahini, yogurt, lemon juice, and minced garlic. Add warm water until the sauce reaches a thick yet pourable consistency. Season with salt.
  5. Heat a skillet or cast-iron pan over medium-high heat with 1–2 Tbsp neutral oil. Add koftas, leaving space between them, and cook for 3–4 minutes per side until golden-brown and cooked through.
  6. Transfer koftas to a warm plate. Spoon tahini-yogurt sauce across the top, sprinkle with toasted nuts and sumac, and scatter chopped parsley. Serve immediately with lemon wedges.

And that’s literally it. Dinner is served!

Best Ways to Serve

Throw it next to some garlic bread and call it a night. My kids like it with rice, while I drown mine in the tahini sauce. Honestly? Perfect straight out of the pan with a fork.

How to Store Leftovers

For the fridge, keep leftovers in an airtight container for up to 3 days. You can freeze them too; just wrap them well. When you’re ready to eat, pop it in the microwave for about 2 minutes — good as new! If it even lasts that long in your house.

Quick Tips So You Nail It

  • Don’t skip the chilling step — that’s where the magic happens.
  • If your tahini is too thick, just add a bit more warm water to thin it out.
  • Want it extra zesty? Add a pinch of lemon zest to the sauce.
  • Use fresh parsley for a brighter flavor — it makes a difference!

Fun Ways to Switch It Up

  • Going dairy-free? Use almond yogurt instead of Greek — nobody will know.
  • Feeling spicy? Throw in some chili flakes for a kick.
  • Short on time? Skip the chilling step and it’s still delicious.

Got Questions? I Got You

Can I prep this the night before?

Absolutely! Just form the koftas and keep them in the fridge, ready to cook the next day.

I don’t have tahini — what else works?

You can substitute with any nut butter like almond or peanut butter for a similar creamy texture.

Help! Mine came out too dry. What happened?

You might’ve overcooked them. Keep an eye on the cooking time to ensure they stay juicy.

Is this freezer-friendly?

Yes, it is! Just freeze the koftas before cooking, and they’ll last about 3 months.
