This Beef Kofta recipe is the kind of weeknight dinner that’ll have everyone asking for seconds. You might think making these flavorful meat logs is complicated, but trust me, it’s a breeze! Seriously, if you can stir a spoon, you can make this. And while you’re at it, if you’re into easy dinners, you’ll flip over my Beef Tenderloin Medallions too.
Why This Beef Kofta Hits Different
- Ready in 30 minutes flat
- One bowl, minimal dishes
- Kid-tested, parent-approved
- Uses stuff you already have at home
- Leftovers taste even better the next day
This is the recipe I make when I really don’t feel like cooking — and it still turns out amazing. Okay, let’s get into it!
What You’ll Need
- For the good stuff:
- 1 lb ground beef (80/20 for juiciness)
- 1 small onion, finely grated or minced
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 2 tbsp fresh cilantro, finely chopped (optional but SO worth it)
- 1 egg
- 1/4 cup plain breadcrumbs (or panko)
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp smoked paprika
- 1/4 tsp ground cinnamon
- 1 tsp salt, or to taste
- 1/2 tsp black pepper
- Pinch of chili flakes (optional)
- For cooking:
- 2–3 tbsp olive oil or vegetable oil
- For serving:
- Plain yogurt or tzatziki (optional)
- Lemon wedges (optional)
- Fresh mint or extra parsley (optional)
- Pita bread, rice, or salad (optional)
How to Make It — Stupid Easy
- First things first — preheat your skillet over medium heat or toss that oven to 400°F (200°C).
- In a large bowl, mix the ground beef, grated onion, garlic, parsley, cilantro, egg, breadcrumbs, cumin, coriander, paprika, cinnamon, salt, and pepper until just combined. Don’t overwork the meat; we want tenderness here!
- Wet your hands slightly and form the mixture into small logs or balls about 1.5–2 inches long. Chill for 10–15 minutes to firm them up.
- For cooking: Heat 2 tbsp oil in the skillet and fry the koftas in batches for 8–10 minutes until browned. Alternatively, bake them on a lined tray in the oven for 15–20 minutes, turning once.
- Let the koftas rest for 3–5 minutes off the heat. Serve with warm pita, yogurt or tzatziki, chopped parsley, and lemon wedges.
And that’s literally it. Dinner is served!
Best Ways to Serve
- Throw it next to some garlic bread and call it a night.
- My kids like it with some roasted veggies, I drown mine in tzatziki.
- Honestly? Perfect straight out of the pan with a fork.
How to Store Leftovers
- Fridge: Store in an airtight container for up to 3 days.
- Freezer: You can freeze them for up to 2 months.
- Reheating: Pop it in the microwave for 1–2 minutes — good as new. If it even lasts that long in your house.
Quick Tips So You Nail It
- Don’t skip the chilling step — that’s where the magic happens.
- If your onion is too watery, just squeeze out the excess moisture.
- Want it extra flavorful? Add a pinch of crushed red pepper for a kick.
- Use fresh herbs for the best taste, but dried will work in a pinch too.
Fun Ways to Switch It Up
- Going dairy-free? Use non-dairy yogurt for dipping — nobody will know.
- Feeling spicy? Throw in some chopped jalapeños or a dash of cayenne.
- Short on time? Skip chilling and cook them straight away; they’ll still be delicious!
Got Questions? I Got You
Can I prep this the night before?
Absolutely! Just mix everything and store it in the fridge. Shape them right before cooking.
I don’t have cilantro — what else works?
You can totally use more parsley or even fresh dill if you have it on hand.
Help! Mine came out too dry. What happened?
Sounds like you might have overcooked them. Keep an eye on them — they cook quickly!
Is this freezer-friendly?
Yes! Just freeze after cooking, and reheat when you’re ready to enjoy.
