For the sauce:
- 1 tbsp oil for sauce
- 1 medium onion, thinly sliced
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 tbsp curry powder (mild or medium)
- 1 tbsp tomato paste
- 2 cups vegetable broth
- 1 tbsp soy sauce or tamari
- 1 tbsp maple syrup or sugar
- 1 tbsp cornstarch mixed with 2 tbsp cold water
For the topping:
- Pickled red cabbage or quick-pickled cucumbers (optional)
- Chopped green onions or cilantro for garnish
- Lemon wedge or Japanese tonkatsu sauce for drizzling (the cheap kind works fine)
How to Make It — Stupid Easy
- First things first — press the tofu for at least 15–30 minutes to remove excess water, then slice it into 3/4-inch thick cutlets. Season with salt and pepper.
- Set up a dredging station: put flour in one bowl, non-dairy milk mixed with soy sauce in a second, and panko in a third.
- Coat each tofu slice in flour, dip it in milk, then press into panko until well coated.
- Heat 2–3 tbsp oil in a skillet over medium heat and fry tofu for 3–4 minutes per side until golden and crisp. Transfer to a wire rack.
- In a separate pot, heat 1 tbsp oil over medium and add the onion. Cook until soft, about 6–8 minutes. Add garlic and ginger, and cook for 30 seconds.
- Stir in curry powder and tomato paste, cooking for 1 minute, then slowly add vegetable broth, soy sauce, and maple syrup. Let it simmer.
- Whisk in the cornstarch slurry and simmer for another 2–3 minutes until thick. Adjust seasoning as needed.
- Serve by slicing the tofu, placing it over warm rice, and ladling the curry sauce on top. Garnish with pickles, green onions, and a lemon wedge.
