  • Salt and black pepper, to taste
  • For the topping:
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh lemon juice
  • A handful of fresh herbs — optional but SO worth it

How to Make It — Stupid Easy

  1. First things first — bring a large pot of lightly salted water to a rolling boil. Carefully drop in the corn pieces and boil for 5–7 minutes until the kernels are tender and bright yellow. Drain the corn well and set aside in a large mixing bowl.
  2. While the corn is cooking, place a small saucepan over medium-low heat and melt the butter.
  3. Add the minced garlic into the melted butter and sauté for 1 minute, just until fragrant. Don’t let it brown or burn, or it’ll turn bitter. You got this!
  4. Stir in the Cajun seasoning, smoked paprika, cayenne pepper, salt, and black pepper. Let those spices cook in the butter for about 30 seconds to really let the flavor pop.
  5. Remove the saucepan from heat and stir in the chopped parsley and lemon juice to brighten up the sauce.
  6. Pour the warm, spiced garlic butter over the hot corn in the mixing bowl. Toss it thoroughly until every piece is coated and glistening.
