The Easiest Ravioli You’ll Ever Make
This ravioli is a breeze to whip up, taking just a few minutes of your time. With simple ingredients and minimal effort, you’ll have a comforting meal that feels fancy without any of the fuss. Seriously, if you can stir a spoon, you can make this.
Why This Ravioli Hits Different
- Ready in 15 minutes flat
- One pot, minimal dishes
- Kid-tested, parent-approved
- Uses stuff you already have at home
- Leftovers taste even better the next day
This is the recipe I make when I really don’t feel like cooking — and it still turns out amazing. Okay, let’s get into it!
What You’ll Need
- For the good stuff:
- 1.1 pounds ravioli
- 3 ounces unsalted butter (the cheap kind works fine)
- ¼ cup lemon juice (fresh is best, but bottled works too)
- 1 ounce grated Parmesan (I like extra)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon dried thyme
- 2 garlic cloves (grated)
- 7 ounces green asparagus
- For the topping:
- Crushed red pepper flakes (for serving)
- Freshly ground black pepper (for serving)
- Lemon zest (for serving, skip if you hate it)
A handful of fresh herbs — optional but SO worth it!
How to Make It — Stupid Easy
- First things first — prep your ingredients: grate the garlic, snap off the woody end of the asparagus, and cut any larger pieces in half lengthwise. Squeeze out the lemon juice.
- Bring a large pot filled with salted water to a boil.
- While that’s happening, heat a large skillet over low. Add butter and stir until melted. Then, add garlic and sweat for about 1 minute. Stir in salt, pepper, and thyme.
- Add the lemon juice and stir for 30 seconds. Toss in the asparagus, making sure it’s in a single layer, and cook for 3-5 minutes.
- Meanwhile, drop the ravioli into the boiling water and cook for about 3 minutes. Drain, but don’t forget to reserve ½ cup of the cooking water.
- Add ¼ cup of the reserved cooking water to the asparagus and cook for 1 minute. Turn off the heat and stir in the parmesan.
- Add the ravioli to the skillet and toss to combine. Finish off with freshly ground black pepper, red pepper flakes, and lemon zest. Serve!
And that’s literally it. Dinner is served.
Best Ways to Serve
- Throw it next to some garlic bread and call it a night.
- My kids like it with a side of steamed veggies, but I drown mine in extra Parmesan.
- Honestly? Perfect straight out of the pan with a fork.
How to Store Leftovers
If you have any leftovers (if), store them in an airtight container in the fridge for up to 3 days. You can also freeze it, but it may change the texture a bit when reheating. Pop it in the microwave for 2-3 minutes or on the stove over low heat for a few minutes — good as new. If it even lasts that long in your house.
Quick Tips So You Nail It
- Don’t skip the garlic step — that’s where the magic happens.
- If your asparagus is getting too soft, just reduce the cooking time a bit.
- Want it extra zesty? Add a pinch of lemon zest right before serving.
- If you’re feeling fancy, throw in some fresh herbs for added flavor.
Fun Ways to Switch It Up
- Going dairy-free? Use nutritional yeast instead of Parmesan — nobody will know.
- Feeling spicy? Throw in some red pepper flakes while cooking the garlic.
- Short on time? Skip the asparagus and it’s still delicious.
Got Questions? I Got You
Can I prep this the night before?
Absolutely! Just keep the ingredients separate until you’re ready to cook.
I don’t have asparagus — what else works?
Broccoli works great or even some baby spinach for a quick swap.
Help! Mine came out too watery. What happened?
You probably added too much cooking water. Just use a little less next time!
Is this freezer-friendly?
Yes, but be aware the texture may change when reheating.
