  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup shredded carrots
  • 1/2 cup mandarin orange segments (the cheap kind works fine)
  • 1/4 cup sliced almonds (I like extra)
  • 1/4 cup crumbled feta cheese (skip if you hate it)
  • For the dressing:
  • 2 tablespoons olive oil (room temp works best)
  • 1 tablespoon honey
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: A handful of fresh herbs (optional but SO worth it).

How to Make It — Stupid Easy

  1. First things first — gather all your ingredients and make sure everything’s measured out and ready to go.
  2. Wash the mixed greens thoroughly to remove any dirt or debris, then pat them dry with a clean towel or paper towels.
  3. Toss the washed greens into a large salad bowl.
  4. Rinse the cherry tomatoes and cut them in half. Add them to the bowl with the greens.
  5. Slice the cucumber into thin rounds, discarding the ends, and toss those in as well.
  6. Peel the red onion and slice it thinly, then add the onion to the bowl.
  7. Shred the carrots using a grater or a food processor and mix those in.
  8. Open the can of mandarin oranges, drain the syrup, and gently add the segments to the bowl.
  9. Measure the sliced almonds and sprinkle them evenly over the salad.
  10. Crumble the feta cheese and add that to the mix.
  11. In a small bowl or jar, whisk together olive oil, honey, apple cider vinegar, salt, and black pepper until the dressing is well combined.
  12. Pour the dressing over the salad just before serving.
  13. Toss the salad gently with your hands or salad tongs to coat everything evenly.
  14. And that’s literally it. Dinner is served!
