- 1/4 cup Nutritional Yeast (optional): Gives a cheesy, umami flavor, perfect for a savory profile, especially if you’re keeping it vegan.
- 1 teaspoon Cumin Powder: Offers a warm, earthy flavor that pairs beautifully with both the lentils and spinach.
- 1/2 teaspoon Garlic Powder: Adds a savory depth of flavor. You can swap it with fresh minced garlic if you prefer.
- 1/2 teaspoon Onion Powder: Contributes a subtle base note.
- 1/2 teaspoon Salt (or to taste): Enhances all the flavors. Himalayan pink salt or sea salt are good options.
- 1/4 teaspoon Black Pepper: Adds a touch of warmth and spice.
- 1 tablespoon Olive Oil or Avocado Oil (plus more for cooking): Used in the batter for richness, and more is needed for greasing the pan.

How to Make It — Stupid Easy
- First things first — rinse the lentils under cold running water until the water runs clear. Soak them in a bowl with 2 cups of water for at least 2-3 hours (4-6 hours is even better).
- Drain the lentils using a fine-mesh sieve and give them a quick rinse again.
- Wash the fresh spinach thoroughly. Roughly chop it to help with blending.
- Transfer the drained lentils to a high-speed blender. Add the spinach, 1 cup of blending water, optional nutritional yeast, cumin powder, garlic powder, onion powder, salt, black pepper, and olive or avocado oil.
- Blend until the mixture is completely smooth and lump-free. If it seems too thick, add a bit more water.
- Pour the batter into a bowl, cover it, and let it rest for about 15-30 minutes if you can wait.
- Heat a non-stick skillet over medium heat. A drop of water should sizzle on the surface.
- Lightly grease the pan with oil. Pour about 1/4 to 1/3 cup of batter onto the center and swirl to form a thin, even circle.
- Cook for 2-4 minutes until the edges look dry and bubbles form on the surface.
- Flip it carefully and cook for another 1-3 minutes until golden-brown.
- Repeat with the remaining batter, keeping the cooked flatbreads warm under a towel.
